One 236 g (8.24 oz) package of Breadfruit Muffin + Cake Mix.

INGREDIENTS

Breadfruit, Coconut Sugar, Sea Salt, Baking Soda.

APPROXIMATE YIELD

One package makes approximately 8 medium-to-large muffins or one loaf measuring about 9 × 5 × 4 inches.

YOU’LL NEED

• 1 package dry mix

• 1/2 cup oil

• 2 large eggs or prepared flaxseed egg replacement

• 1 cup water

• 1 tablespoon vanilla extract

• 2 teaspoons apple cider vinegar

PREPARATION

1. Preheat oven to 350°F.

2. Pour the dry mix into a large bowl. Add eggs, oil (coconut oil recommended), water, apple cider vinegar, and vanilla extract. Mix until smooth.

3. Pour the batter into a greased 9 × 5-inch loaf pan or muffin pan.

4. Bake for 25–35 minutes, or until a toothpick inserted into the center comes out clean.

VEGAN EGG OPTION

For each egg, combine 1 tablespoon ground flaxseed with 3 tablespoons water and let it rest for 5 minutes before using.

OPTIONAL ADD-INS

The package suggests pumpkin seeds, chopped almonds, pistachios, or cinnamon. These are optional customer-added ingredients and are not included in the dry mix. Almonds and pistachios are tree nuts.
